Polsgrove Hill Farm: Organic Success in Mount Carroll

Wes Hepker and Daniela Williams left their corporate jobs in suburban Illinois to start an organic farm on 20 wooded acres in the Driftless region of the Midwest. After visiting their local farmers market, they found limited fresh produce available.

The couple's plans shifted from backyard gardening to farming when they started Polsgrove Hill Farm in 2023 as a small operation growing specialty crops like arugula, peppers, lettuce, radishes, and strawberries.

Polsgrove Hill Farm occupies the top of a hill overlooking neighboring soybean and corn fields. The farm's logo combines a slanted line representing the hill with three arugula silhouettes that also resemble trees.
