Celebrated chef Justin Yang has made his debut in Hong Kong's dining scene with the launch of QUAN, his modern Chinese restaurant in Central.
The restaurant, which opened on August 23rd, 2026, has already attracted prominent personalities and industry luminaries, including Nicholas Tse and chef André Chiang.
Yang's menu is a dynamic homage to seasonal produce, carefully curated to surprise and delight at every turn. The hot oil marble goby, a signature creation emblematic of both technical skill and personal narrative, sees the star ingredient steamed and then finished with a cascade of sizzling peanut oil over shredded scallion, ginger, and chilli.
The restaurant's philosophy is to distinguish itself by quality and originality, rather than entering a price war.
