Italy's domestic olive oil production has been on a downward trend for nearly two decades. According to ISTAT, the country produced 379 million liters of olive oil in 2025, down from 603 million liters in 2006, a decline of 38%. Meanwhile, imports have increased by 44% over the same period.

The planted area in Italy has remained relatively stable, decreasing only by 1.4% between 2006 and 2025. However, average yields have declined significantly, falling from 30.7 quintals per hectare to 22.7 quintals per hectare over the same period.

The high olive oil inventories in Italy are a pressing issue ahead of the new season. Industry organizations warn that large unsold stocks could make it difficult for farmers to start the new harvest, putting pressure on the domestic market.
